TORTANG TALONG SECRET RECIPE

🍆 Tortang Talong
A classic Filipino eggplant omelet—simple, savory, and great with steamed rice.
Ingredients
2 large Asian eggplants
2 eggs
2 cloves garlic, minced
ÂĽ small onion, finely chopped
2 tablespoons cooking oil
½ teaspoon salt
ÂĽ teaspoon black pepper
Optional: 2 tablespoons chopped tomatoes or ground pork
Instructions
Cook the eggplants: Grill, broil, or roast the eggplants until the skin is charred and the flesh is very soft, about 10–15 minutes. Let them cool slightly.
Peel: Remove the charred skin while keeping the stem attached. Gently flatten each eggplant with a fork.
Make the egg mixture: Beat the eggs with garlic, onion, salt, and pepper.
Coat the eggplant: Dip each flattened eggplant into the beaten eggs, making sure it's well coated.
Fry: Heat oil in a pan over medium heat. Carefully place the eggplant in the pan and pour any remaining egg mixture over it.
Cook for 3–4 minutes per side, until golden brown and the egg is fully cooked.
Serve: Enjoy hot with steamed rice and, traditionally, a dipping sauce such as soy sauce with calamansi.
Tip: For the best smoky flavor, grill the eggplants over an open flame until the skin is nicely blistered and charred.
